#116 :: Shrimp and Pasta in a Tomato-Chile Cream Sauce

We wanted to go to the Westside Market since Jamie and I were both off this weekend, so I sat down and planned out our meals for the week before we went. I found some great recipes in my searching, so we've got some great things to add to the blog this week! We bought fresh bacon, chorizo, chicken, hamburger and shrimp. We also hit up the veggie stands for Romain, Swiss Chard, Corn, Poblanos, Green Peppers, Roma Tomatoes, Fresh Parsley, Sweet Onions, Jalapenos, and then we got some Mozzarella and Parmesan cheeses. All I can say is it's going to be a delicious week!

I searched Food Network's website for a cream pasta and came up with this gem of a recipe from Emeril. Onions, tomatoes, jalapenos and garlic with shrimp in a creamy sauce, hit with Emeril's Cajun spices. It was fantastic! Restaurant quality served right at home, and I think we calculated the ingredients cost us about ten dollars.

Ingredients

  • 1/4 cup salt
  • 1 pound linguine
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Essence, recipe follows
  • 1 1/2 teaspoons salt
  • 1 cup finely chopped yellow onion
  • 1/4 cup finely chopped jalapeno
  • 1 tablespoon minced garlic
  • 11/2 cups heavy cream
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup diced tomatoes
  • 1/2 cup reserved pasta cooking water
  • 1 cup grated Pepper Jack cheese
  • 1/4 cup grated Parmesan
  • 2 tablespoons chopped fresh parsley leaves
  • 2 tablespoons chopped fresh basil leaves

Directions

Set a large 1-gallon stock pot of water to a boil and add the kosher salt. Place the linguine in the pot and stir the pot until the water returns to a boil. Cook the pasta until tender, but with a bit of resistance (al dente), about 12 minutes. Drain a reserve 1/2 cup pasta water.

While the pasta cooks, prepare the sauce. Set a 12-inch saute pan over medium-high heat. Add the butter and olive oil to the pan. Once the butter has melted, season the shrimp with 1 tablespoon of the Essence and 1/4 teaspoon of the salt and add the shrimp to the pan. Sear the shrimp until well browned on both sides, about 2 minutes. Remove from the pan and set aside.

Add the onions and jalapenos to the pan and saute until the onions are softened and lightly caramelized, about 4 to 5 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Add the cream, remaining 1 tablespoon of Essence, remaining 1 1/4 teaspoons of the salt and the pepper to the pan and bring to a boil. Cook the sauce until the cream is reduced by half, about 2 minutes.

Return the shrimp to the pan, and add the tomatoes, linguine and the reserved cooking water to the pan and cook, tossing to incorporate for 3 to 5 minutes. Remove pan from the heat and add the Pepper Jack, Parmesan, parsley and basil and toss to blend. Serve immediately.

#100 :: Mexican Shrimp Burgers with Avocado Aioli

Our 100th recipe! When I started this blog, I wasn't sure we'd make it this far!

I'm so glad the new season of Mexican Made Easy has started. I don't think I've ever made anything from this show on Food Network that I didn't like! These burgers were amazing, and putting them together was surprisingly easy. At first it seemed like a lot of ingredients, but the prep is easy; just toss everything in a food processor, shape into patties and toss on the grill. Done! Same for the avocado aioli; throw the ingredients in the food processor, give it a whiz, and you're done. Couldn't be easier!

Ingredients

Burgers:

  • 1 pound medium uncooked shrimp, shelled and deveined
  • 1 egg
  • 2 tablespoons chopped cilantro leaves
  • 1 garlic clove, peeled
  • 3/4 cup plain bread crumbs, plus more as needed
  • 1 poblano chile, roasted, peeled, stemmed, seeded, and diced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil

Avocado Aioli:

  • 1 Hass avocado, halved, pitted, and peeled
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 2 medium garlic cloves, peeled
  • 1 serrano chile, stemmed, halved and seeded (we omitted the serrano)
  • 2 tablespoons chopped cilantro leaves
  • Sea salt and freshly ground black pepper
  • 6 hamburger buns, split in half
  • 3 medium tomatoes, sliced
  • 6 lettuce leaves or a mixture of baby lettuce leaves

Directions

Burgers:

In a food processor, combine the shrimp, egg, cilantro, garlic, 3/4 cup bread crumbs, poblano chile, salt, and pepper. Process until the mixture is a coarse puree. Form the mixture into 6 patties and set aside (if the mixture is too wet, add additional bread crumbs, 1 tablespoon at a time, until the mixture can be molded easily).

Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the patties with vegetable oil and grill until golden, about 3 minutes per side, depending on the thickness.

Avocado Aioli:

Scoop the avocado pulp into the bowl of a food processor. Add the mayonnaise, lime juice, garlic cloves, serrano chile and cilantro. Process until smooth. Season with salt and pepper, to taste.

To assemble:

Serve the shrimp burgers on buns, topped with a dollop of avocado aioli, sliced tomato, and lettuce.

#84 :: Lemony Shrimp Scampi Pasta

Seafood and pasta is a favorite of ours, and this one was another great combo! The recipe called for shrimp, but we used a combo -- shrimp, scallops and calamari. The extra bonus was that the leftovers tasted even better than the original dinner.

Ingredients

* 6 garlic cloves, pressed or grated
* 2 lemons, zested and juiced
* 5 tablespoons olive oil
* 1 teaspoon red pepper flakes
* Kosher salt and freshly ground black pepper
* 3/4 pound medium shrimp (21 to 25), peeled, de-veined and butterflied (reserve shells)
(we used a mix of seafood - shrimp, scallops & calamari)
* 1/4 onion
* 3/4 pound thin linguini (we used angel hair)
* 2 tablespoons butter
* 1 small bunch parsley, leaves chopped

Directions

In a bowl, combine the garlic, zest and juice of 1 lemon, olive oil, red pepper flakes, salt and pepper, to taste, and the shrimp. Set aside.

Meanwhile make a quick shrimp stock: In a small pot, over medium heat, add the shrimp shells and onion. Cover with water and bring to a boil. Reduce the heat and simmer for 20 minutes. Strain into a bowl and discard the shells and the onion.

Bring a large pot of water to a boil over high heat and add a generous amount of salt. Add the linguini and cook until just tender, 2 minutes less than instructed on the package. Drain and reserve 1/2 cup of cooking water.

Heat a skillet over high heat. Add the shrimp and cook until they turn pink and start to caramelize, about 3 minutes. Remove the shrimp from the pan to a plate and add the remaining marinade. Let cook a few minutes then add about 1 cup of shrimp stock and about 1/2 cup pasta water. Continue to cook until sauce reduces by half. Add the zest and juice of the remaining lemon, the butter and the parsley and stir to combine. Adjust seasoning with salt and pepper, to taste. Add in the shrimp and pasta and toss to combine with the sauce. Turn out into a serving bowl and serve immediately.

  • 1 tablespoon oil
  • 1/2 pound Mexican-style chorizo
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 jalapeno, minced
  • 1 red onion, diced
  • 2 tablespoons garlic, minced
  • 1 cup short-grain rice
  • 1 cup low-sodium chicken stock
  • 1/2 cup white wine
  • 1/2 cup water
  • 4 large, fresh poblano chiles
  • 1 pound shrimp, shelled, cut into 1/2-inch pieces
  • 3/4 cup Cheddar, shredded
  • 3/4 cup Jack cheese, shredded

Directions

In a medium saucepan, heat oil and chorizo, cook for 3 minutes. Add peppers, jalapeno, onions and garlic. Cook until translucent, then add rice and cook until all the grains of the rice are coated with oil. Add all liquids and stir over high heat for 3 minutes, cover and reduce heat to low. Check rice for doneness after 20 minutes.

Preheat oven to 400 degrees F.

#47 :: Chicken & Shrimp Kabobs

There are so many different varieties of kabobs to make...we could go all summer and never make the same ones twice! Plus, something about grilling veggies makes them taste so much better! Grilled flavor really is the best! I can't wait until summertime when we can grill kabobs outdoors on the patio! Listen to me talking about summer in February....I think I have a case of cabin fever......

Ingredients

  • 1 bag frozen shrimp (around 12 oz.- we used pre-cooked)
  • 2 chicken breasts
  • 1 green bell pepper
  • 1 pint of mushrooms
  • Sprinkle of garlic salt
  • Salt & pepper to taste
  • Wooden skewers

Directions

Since our shrimp were pre-cooked, and our chicken wasn't, we put them on different skewers. If your shrimp is raw, you can use it on the same skewer as the chicken.

Cut the chicken breast into small to medium sized cubes. Do the same with the green bell
pepper, and remove the stems from the mushrooms. Slide them onto the skewers, alternating meats and veggies. Sprinkle with garlic salt, and then salt & pepper to season.

Cook on a med-high heat grill for 10-12 minutes, rotating occasionally to get grill marks on all sides.

This wedding gift has probably been used more than anything else we got -- The George Foreman Indoor/Outdoor Electric Grill! You can use it outdoors on its stand, or indoors on the counter. Having an indoor grill in Ohio during the winters is GREAT! Thanks Mike & Michelle!

#22 :: Garlic Shrimp Scampi with Angel Hair

We bought some frozen shrimp at the grocery store and have been waiting to try something with it! This was one of our own creations (no recipe followed), and it turned out delicious!

Ingredients

  • Angel Hair pasta (or your favorite kind)
  • About 40-50 small shrimp (we just got a bag from the frozen foods)
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. butter
  • Juice of 1/2 lemon
  • 1 tsp. minced garlic
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 tsp. parsley
  • Zest of 1/2 lemon
  • Salt & pepper to taste

Directions

Zest the lemon first, and put aside for later use.

Boil the pasta for 8-12 minutes or until al dente. (I always use salt and oil in my pasta water, salt for flavor and oil to keep the noodles from sticking.)

In a saucepan over medium heat, combine the olive oil, butter and lemon juice. Stir until mixed. Add in the garlic and saute (be careful not to overcook the garlic.) Add the shrimp and saute for about 5 minutes on each side.

Remove from heat. Toss in the lemon zest, parsley, crushed red pepper and salt & pepper. Cover the saucepan and let sit for 5 minutes. The sauce will thicken. Serve over a bed of angel hair pasta and drizzle remaining oil from the saute pan over the top.
